If you want to know where to start, start with Clement of Rome, a direct successor of Peter. Then work your way with the other ones that you will discover in time.

I haven’t started reading on the Church Fathers because from where I come from we don’t emphasize them that much. Though truly, I have a desire to get to know them better and since I have some free time today, perhaps I’ll start doing some research right now! Where should I start?

You can start with Clement of Rome's Epistle to the Corinthians. Very interesting what he says in there.

Reading the Church Fathers can be very spiritually beneficial, as they teach the same things as the Apostles, and also teach new things that support the Apostolic teaching. Their teachings are really useful!
